Sheet Pan Eggs are so easy to make and loaded with flavor. I added spinach, goat cheese, sun-dried tomatoes, zucchini, dill, and red onion to mine, but the combinations are endless. Turn the eggs into breakfast sandwiches or eat on its own. The full recipe is at www.saltandsprinkles.com.

It’s so easy to make riced broccoli! All you need is:
-food processor
-broccoli florets trimmed to 1-inch each

Pulse the broccoli until the texture is similar to rice.

To cook:
1. Add your riced broccoli to a sauté pan with 1 tablespoon olive or avocado oil. Sauté for riced broccoli for 2-3 minutes.
2. Serve with anything that you would serve over rice.

I forgot to thaw some chicken last night so to the pantry I went! Using orzo from @delallofoods, some remaining asparagus and peas I had, pesto sauce from @giovanniranausa, chicken broth from @betterthanbouillon, salt, pepper, butter, and a drizzle of @traderjoes balsamic glaze, this delicious asparagus and peas orzo was created! Ranch Foil Packet Dinner (easy dinner)
Ingredients
* 1 package Hidden Valley Ranch Dressing and Mix
* 4 small yellow potatoes peeled and thinly sliced
* 2 cups cherry tomatoes
* 1 large yellow onion, sliced
* 2 garlic cloves, thinly sliced or minced
* 1 tablespoon olive oil
* 1 pound lean ground beef
* 1 tablespoon Worcestershire sauce
* salt & pepper to taste

Instructions
* Preheat oven to 375°F.
* In a large bowl combine the potatoes, cherry tomatoes, onions, garlic, 1 tablespoon olive oil, and 1/2 of the ranch packet, salt, and pepper. Stir to combine.
* In another bowl, combine ground beef, the other half of the ranch packet, Worcestershire sauce, salt and pepper. Form into four patties and set aside.
* Evenly distribute the vegetables to 4 pieces of foil that will hold all of the ingredients.
* Top each with 1 beef Patty.
* Seal foil packets well. Place beef side up on a large baking sheet and bake 45-60 minutes or until the potatoes are tender. I open up one of the packets towards the end of piece the potatoes with a fork. If it’s not tender continue roasting.
* Season with any seasoning you like. If you want more salt and pepper, add it!

Chicken Zoodle Soup is pure comfort in a bowl and will cure any hangover you may or may not have 😉 recipe below:
Chicken Zoodle Soup
INGREDIENTS
* 1 tablespoon olive oil
* 1 teaspoon Kosher salt
* ½ teaspoon freshly ground black pepper
* 1 yellow onion, diced
* 3 stalks celery, diced
* 2 carrots, peeled and diced
* 3 cloves garlic, minced
* 1 sprig fresh rosemary, minced
* ½ teaspoon chipotle chili powder (optional for heat)
* 6 cups chicken broth
* 2 dried bay leaves
* 1 pound boneless, skinless chicken breasts
* 3 medium-sized zucchini, spiralized
* 1 lemon, juiced
* Fresh parsley leaves, chopped for garnish

INSTRUCTIONS
1. Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium-high heat. Add onions, celery, and carrots. Cook, stirring occasionally, for 5 minutes, or until tender.
2. Stir in minced garlic and rosemary. Cook until fragrant, about 1 minute. Sprinkle in chipotle chili powder (optional).
3. Pour in chicken broth and bring to a boil. Once boiling, reduce to a simmer and add bay leaves, and chicken breasts. Cover and cook for 15 minutes.
4. Once the chicken is cooked to 165 degrees F, remove and shred.
5. Stir in zucchini noodles and chicken; reduce heat and simmer until zucchini is tender, about 3-5 minutes. Stir in lemon juice; season with salt and pepper, to taste.
