If garlic bread and bruschetta had a baby – this would be it! Garlic bread bruschetta is so easy to make with minimal ingredients. Garlic butter is smeared over the baguette slices and grilled to perfection. Topped with a tomato bruschetta mixture. It’s the perfect, easy appetizer you’ll be proud to serve your guests.
Ingredients
- Salted butter
- Garlic – and lots of it!
- Freshly cracked black pepper
- Dried parsley
- Baguette
- Grape tomatoes
- Extra virgin olive oil
- Balsamic vinegar
- Fresh basil
- Kosher salt
- Shredded Parmesan
Step-by-Step Instructions
- In a small bowl, stir together the butter, garlic, freshly cracked black pepper, and dried parsley. If using unsalted butter add ½ teaspoon salt.
- Smear each baguette slice with garlic butter and place them on a plate.
- Heat a gas grill to medium.
- When the grill is ready, place bread slices onto the grill. Grill the bread, turning once and watching carefully; about 3-5 minutes.
- Bruschetta topping: In a medium-sized bowl, mix together the tomatoes, olive oil, balsamic vinegar, fresh basil leaves, and salt.
- Top each garlic toast with a spoonful of the tomato mixture. Sprinkle with shredded parmesan. Serve!

Recipe Notes
- You can use a grill pan on the stove instead of an outdoor grill. Preheat the grill pan to medium-high heat. When hot, brush olive oil directly on the grill pan. Add bread slices and cook for 2 minutes and then flip to the other side. Continue flipping until the bread is nice and toasty.
- Adding small mozzarella balls to the tomato mixture gives it a fun little twist Caprese twist.
- How to chiffonade basil – take your 5 basil leaves and stack them on top of each other. Roll the leaves into a small rope-like shape. Thinly slice through the rolled leaves until you have sliced through the entire roll.
- You can skip the garlic bread steps altogether and toast the baguette slices with a drizzle of olive oil and then spoon the tomato mixture on top of the toast.
- Any rustic type of bread will work including ciabatta and sourdough.
