Buffalo Chicken Zucchini Boats

Ingredients

  • 3 medium zucchini sliced lengthwise
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 2 tablespoons melted butter
  • 1/4 cup blue cheese crumbles for garnish
  • 2 stalks of celery diced, for garnish

Spicy Ranch Dressing

  • 1/2 cup ranch dressing dressing
  • 3 tablespoons sour cream
  • 1 tablespoons dried dill
  • 1 teaspoon juice from pepperoncini peppers
  • 1/4 teaspoon salt
  • pepper to taste

Instructions

  • Preheat the oven and prep the zucchini. Preheat the oven to 400 degrees. Take a spoon and carefully hollow out each zucchini half. Set aside in a 9x12 baking dish or sheet pan.
  • Mix the buffalo chicken. In a medium bowl, combine the shredded chicken, hot sauce, and melted butter. Stir until combined and the chicken is coated in buffalo sauce. Add buffalo chicken to each zucchini boat.
  • Bake. Tightly cover the baking dish with foil and bake in the oven for 25-30 minutes. 
  • Make the spicy ranch. Mix together the ranch dressing, sour cream, dill, pepperoncini juice, salt, and pepper. You want the sauce to be fairly thin and easy to drizzle. Add more pepperoncini juice until you get the right texture.
  • Serve. Once the zucchini boats are finished cooking, take them out of the oven and sprinkle them with blue cheese crumbles, chopped celery, and a drizzle of spicy ranch dressing.

Notes

  • You can use a pre-cooked shredded chicken if you would like, or pre-cooked chicken breast from the grocery store. You can also cook your own chicken from scratch.
  • Instead of blue cheese, you can use feta, gorgonzola, goat cheese, or even shredded cheddar. Each of these has its own unique and delicious flavor and will work well with this recipe.
  • Choose the right zucchini. Look for ones that are straight and have a consistent thickness. This helps them cook much more evenly.
