Equipment

Ingredients

  • 8 ounce Brie wheel
  • 25 Rhodes frozen rolls
  • 1/4 cup butter melted
  • ½ cup sun-dried julienne-cut tomatoes oil drained
  • 1 tablespoon balsamic vinegar
  • 2 spring fresh rosemary remove the leaves from the stems and mince + more for serving
  • 3 fresh basil leaves rolled up and julienned + more for serving
  • Salt and freshly cracked black pepper to taste
  • 1/2 cup fresh cranberries optional

Instructions

  • Preheat the oven and prep the pan. Preheat the oven to 325°F. Line a round pan or large baking sheet with parchment paper.
  • Place the rolls on the pan. Place the cheese in the center of the pan. Arrange frozen rolls in two circles around the cheese. Remove the brie cheese and refrigerate it until ready to use. Brush the tops of the frozen rolls with melted butter.
  • Let the dough rise. Let the rolls rise for about 3 hours, or until the rolls have doubled in size.
  • Bake. Bake the rolls for 13-15 minutes.
  • Mix the topping. In a small bowl, mix together the sun-dried tomatoes, balsamic vinegar, rosemary, and basil. Season with salt and pepper.
  • Bake the brie. Take the brie wheel out of the refrigerator and cut the top of the rind from the wheel of cheese. Place the cheese in the center of the partially baked rolls. Pour the sun-dried tomato mixture on top of the brie. Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until golden brown. Brush rolls with more melted butter while it’s baking, and sprinkle with salt.
  • Serve. Serve hot with fresh rosemary, basil, and cranberries.

Notes

  • Make sure to let the frozen rolls rise for about 3 hours or until they have doubled in size. This helps create light and fluffy rolls.
  • Removing the top rind from the brie wheel before baking allows the toppings to penetrate the cheese, making it even more delicious, so don't skip this step.
  • Take your time to roll the balls into evenly sized-pieces. This will help the wreath look very aesthetically pleasing.
