Ingredients

  • 2 1/4 cups old fashioned oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 banana mashed
  • 1 1/2 cups shredded carrots
  • 2 cups almond milk may use regular or soy milk
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup

Maple Cream Cheese Icing

  • 3 ounces cream cheese room temperature
  • 3 tablespoons maple syrup

Instructions

  • Preheat the oven. Preheat the oven to 375°F.
  • Combine the dry ingredients. In a mixing bowl combine the oats, cinnamon, baking powder, and salt. Stir to combine.
    2 1/4 cups old fashioned oats, 1 teaspoon cinnamon, 1/2 teaspoon baking powder, 1/4 teaspoon salt
  • Combine the wet ingredients. In a separate mixing bowl combine the mashed banana, shredded carrots, milk, vanilla extract, and maple syrup.
    1/2 banana, 1 1/2 cups shredded carrots, 2 cups almond milk, 1 teaspoon vanilla extract, 1/4 cup maple syrup
  • Blend wet and dry ingredients. Add the liquid ingredients to the dry ingredients and stir well.
  • Bake. Bake for 30-35 minutes or until set.
  • Make the icing. In a small bowl combine the soft cream cheese and the maple syrup. Stir until smooth and well blended. Drizzle the carrot cake baked oatmeal with the maple cream cheese icing and serve hot.

Notes

Mix-ins: Try adding chopped walnuts or pecans, dried pineapple or raisins, shredded coconut, flax seeds or grated apples and pears for more flavor and extra texture.
