Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 yellow onion diced
  • 2 stalks celery diced
  • 2 carrots peeled and diced
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lemon zested and 1/2 juiced
  • 2 tablespoons all purpose flour gluten-free if needed
  • 6 cups chicken broth
  • 3/4 cup orzo
  • 2 cups shredded chicken
  • 2 cups baby spinach

Instructions

  • Saute the vegetables. Add olive oil and butter to a heavy bottomed soup pot. Sauté the onions, celery, and carrots over medium-high heat for 6 minutes. Stir in the garlic and cook for an additional minute, and then add the Italian seasoning, salt, pepper, and lemon zest. Stir in the flour and cook for 1 minute.

  • Add the other ingredients. Add the chicken broth then the orzo and the chicken. Bring to a boil then turn down to simmer for 20 minutes. Stir in the spinach and lemon juice.

  • Serve. Serve hot with your favorite rolls.
