- 1 stick butter room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sprinkles
Preheat the oven and prep the pan. Preheat the oven to 350°F. Spray a baking sheet with nonstick baking spray. Set aside.
Blend the wet ingredients. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar until fluffy, about 3-4 minutes. Add the egg and vanilla. Beat for 1 minute or until combined.
Blend the dry ingredients. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Combine the wet and dry ingredietns. Add the flour mixture to the butter mixture, and beat on low until just combined. Do not overmix.
Form the cookies and rolls in sprinkels. Using a small cookie scoop, scoop the cookie dough and roll it into a ball using your hands. Then roll in the sprinkles and place them on the prepared baking sheet.
Bake. Bake for 11-13 minutes, or until the edges of the cookies are firm. Remove from the oven and allow to cool for 10 minutes before transferring to a wire rack to cool completely.
- If your cookie dough seems a bit sticky, place it in the freezer for 10-15 minutes before rolling it into balls. That should firm it up and help it to hold its shape better while baking.
- You can't really have too many sprinkles. Go ahead and get plenty of color on these cookies!
- Make sure your butter is at room temperature before you start making these cookies. It will help your dough mix up without lumps, and will make your cookies extra soft and chewy.
