Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Old Bay Seasoning divided
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 lemon juiced
  • 3/4 cup heavy cream
  • 1 pound potato gnocchi
  • 1 1/2 cups baby kale

Instructions

  • Prep the chicken. Season the chicken with salt, pepper, and 1 teaspoon Old Bay Seasoning.
  • Cook the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken once the pan is hot and cook for 5-7 minutes. Flip the chicken and add the butter to the skillet. Cook for an additional 7 minutes or until the internal temperature is 165°F. Transfer the chicken to a plate.
  • Make the sauce and cook the gnocchi. Reduce the heat to medium. Add the garlic and cook for 1 minute. Deglaze the pan with the chicken broth and lemon juice. Use a spatula to scrape up the bits on the bottom of the skillet. Add the heavy cream and the remaining teaspoon of Old Bay Seasoning. Add the gnocchi and cook for 7 minutes, stirring occasionally. Turn off the heat and add the kale. Stir until wilted.
  • Serve. Add the chicken back to the pan and serve hot.

Notes

  • Make sure to cut the chicken into evenly sized pieces. You can butterfly cut them if they're thick, or pound them out with a mallet if you'd like.
  • Keep an eye on the gnocchi! They cook quickly, and you don't want them to turn mushy.
  • Freshly squeezed lemon juice adds a really nice flavor and is much better than using the pre-squeezed lemon juice from the grocery store.
  • Don't crowd the pan with the chicken. Give your chicken some room so it turns golden brown. Cook it in batches if you need to.
