  • 1 pound hot (or mild) ground pork sausage
  • 1 medium zucchini sliced
  • 10 ounces grape tomatoes
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 green pepper sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly cracked pepper
  • 16 ounces potato gnocchi
  • fresh basil leaves sliced

Instructions

  • Preheat the oven. Preheat the oven to 425°F. Fill a saucepan with water and bring to a boil.
  • Prep the meat and veggies. On a large rimmed baking sheet, add the Italian sausage in crumbles, zucchini, tomatoes, and peppers. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, red pepper flakes, salt, and pepper. Stir to coat.
  • Bake. Bake for 22-25 minutes or until the sausage is cooked through.
  • Boil the gnocchi. Boil the gnocchi according to package instructions, about 2-4 minutes or until they float to the top. Remove with a slotted spoon.
  • Add gnocchi to vegetables. Remove the baking sheet from the oven and add the cooked gnocchi.
  • Broil. Turn your oven to broil. Place the tray under the broiler for 5 minutes or until the gnocchi is golden brown.
  • Serve. Garnish with basil and serve hot.

Notes

  • Give the veggies a good toss halfway through roasting. Spread them back out into an even layer. They'll cook much more evenly that way.
  • Use a rimmed baking sheet. The juices will stay contained and won't make a mess in your oven.
  • Make sure the sausage is spread out in crumbles or you can end up with chunks of undercooked meat.
