Ingredients

  • 4 sweet potatoes washed
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 pound ground turkey
  • 15 ounces tomato sauce
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • 1 teaspoons chipotle chili powder
  • 1 tabespoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked pepper
  • 1 green pepper diced
  • 1 jalapeno seeded and diced, optional

Instructions

  • Bake the sweet potatoes. Preheat the oven to 400°F. Pierce the sweet potatoes with a fork several times. Bake for 45 minutes or until they are easily pierced with a fork.
  • Make the sloppy joe mixture. Add the olive oil to a hot skillet. Add the onions and cook until softened. Add the garlic and ground turkey. Cook until the turkey is browned. Add the tomato sauce, apple cider vinegar, and tomato paste, stir well. Add the chipotle chili powder, dijon mustard, salt, and pepper. Add the green pepper and jalapeno if using. Cook 2-3 minutes until softened.
  • Serve. Slice the sweet potatoes open then equally divide the sloppy joe mix between the potatoes. Serve hot.
