- 1 pound boneless, skinless chicken breasts sliced in half horizontally
- 6 slices Whole30 compliant bacon
- 1/2 cup Primal Kitchen avocado mayo
- 2 ribs celery diced
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly cracked pepper
- Butter lettuce for serving
Cook the bacon. In a large skillet over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate then dice or crumble once cooled. Keep the skillet over medium-low heat.
Cook the chicken. Season the chicken breasts with salt and pepper. Add the chicken breast to the hot skillet with the bacon fat. Cook for about 3-4 minutes on each side or until the chicken is cooked through to an internal temperature of 165°F. Remove the chicken from the pan to the cutting board. Once cooled chop the chicken into bite-sized pieces.
Combine the ingredients. In a mixing bowl add the chicken, bacon, mayo, and celery. Stir until well combined. Season with additional salt and pepper if needed.
Serve. Serve the chicken salad on top of butter lettuce.
- This salad's 'crunch' comes from the bacon being cooked to crispy. So give it an extra minute in the pan, but keep a close eye on it so it doesn't burn.
- To let the flavors develop, allow the mayo, bacon, and chicken mixture to sit in the fridge for about 30 minutes before serving.
