Breakfast Wrap Recipe

Freezer breakfast wraps are a hearty and convenient breakfast option that can be made ahead of time. Make-ahead burritos are packed with savory tater tots, delicious sausage links, creamy refried beans, and melted Mexican cheese.

Ingredients

  • 2 cups frozen tater tots
  • 2 tablespoons avocado oil
  • 1/2 pound seasoned pork sausage
  • 8 large eggs
  • 1/3 cup heavy cream
  • Salt and pepper to taste
  • 8 burrito size flour tortillas
  • 15 ounces refried beans
  • 2 cups shredded Mexican blend cheese

Instructions

  • Preheat the oven and bake the tater tots. Preheat the oven to 400° F. Cook tater tots according to package instructions. 
  • Cook the sausage and eggs. Heat the avocado oil in a large skillet over medium-high heat. Add the sausage and cook until browned. Add the eggs to the skillet and cook, whisking until they just begin to set. Gently whisk in half and half, season with salt and pepper to taste. Continue cooking until thickened, about 3-5 minutes. 
  • Prep the burritos. Spread the refried beans down the centers of the tortillas. Top with tater tots, sausage and egg mixture, and cheese. Fold on opposite sides of each tortilla, then roll up burrito-style. 
  • Wrap the burritos. Wrap each burrito in parchment paper and tie it with cooking twine. You can also place each one in a small Ziploc bag, just be careful they don't unwrap! Place the burritos into a large, freezer-safe Ziploc bag, label them, and freeze.
  • Reheat. You can reheat it from frozen by placing the opened burrito on the parchment paper in the microwave. Cook for 2 minutes, flip, the cook an additional 2 minutes.
