Hey friends! I’ve been trying to do more meal-prepping in our home. We live busy lives, work full-time, and are parents to a little boy. One thing my husband and I can agree on are these Breakfast Sausage Freezer Burritos. When making these I recommend using burrito size tortillas but taco ones could work if you want to make smaller portions.

There is a step in this recipe where you need to cook frozen tater tots first before you assemble the burritos. I know I’m late to the party saying this, but my air fryer is LIFE CHANGING! Seriously, why did it take me this long to buy an air fryer? I have a toddler and I’m able to make so many meals for him in 10 minutes or less. Anyways, the reason I am bringing it up is that the air fryer is the perfect way to cook the tater tots. You don’t need to wait for your oven to pre-heat. You add the tater tots to the air fryer basket, set it, and forget it!
Ingredients
- 2 cups frozen tater tots
- 2 tablespoons avocado oil
- 8 links breakfast sausage, casing removed
- 8 large eggs
- 1/3 cup heavy cream
- Salt and pepper, to taste
- 1 can refried beans
- 8 flour tortillas – I used burrito size
- 2 cups Mexican blend cheese, shredded
- 2 Roma tomatoes, diced – optional
- Green onions, chopped

Directions on how to make Breakfast Sausage Freezer Burritos
Step 1: Preheat the oven to 400 degrees F. and grease a baking sheet.
Step 2: Cook tater tots according to package instructions and then set aside.
Step 3: Heat avocado oil in a large skillet over medium-high heat. Add sausage and cook until browned. Crumble the sausage as it cooks, drain the excess fat, save 1 tablespoon in the skillet.
Step 4: Add eggs to the skillet and cook, whisking until they just begin to set. Gently whisk in half and half, season with salt and pepper to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes – set aside.
Step 5: Spread beans down the centers of tortillas. Top with tater tots, sausage, eggs, cheeses, tomatoes, and cilantro. Fold on opposite sides of each tortilla, then roll up burrito-style.
Step 6: Place into the oven and bake until heated through – 15 minutes. Serve with salsa, guacamole, and sour cream.
