Other Filling Options for Breakfast Wraps

Honestly, the options seem endless! Breakfast burritos are so forgiving and easy to enjoy. Try any of these filling ideas:

  • Diced ham
  • Sautéed mushrooms
  • Cooked ground turkey
  • Scrambled tofu (for a vegan option)
  • Roasted sweet potatoes
  • Cooked quinoa
  • Sliced avocado
  • Shredded zucchini
  • Chopped scallions
  • Cooked shredded chicken
  • Roasted asparagus
  • Diced tomatoes with basil
  • Crumbled sausage (chorizo, Italian, etc.)
  • Fresh spinach leaves
  • Black forest ham
  • Sauteed red onions
  • Guacamole
  • Pickled jalapeños
  • Sautéed kale
  • Swiss cheese

Keep in mind, some of these ingredients won’t freeze very well, such as guacamole or asparagus. So use your best judgment if you plan to freeze these. Some fillings might be better to use if you plan to eat these fresh.

Ingredients

  • Frozen tater tots – If you prefer, you can use hash browns or grilled diced potatoes. Leftovers work great!
  • Avocado oil – Any vegetable oil like olive oil or canola oil can be used as a substitute.
  • Seasoned pork sausage – You can swap this with turkey sausage, chicken sausage, or vegetarian sausage for a meatless version. Pork sausage will give you a classic breakfast sausage flavor.
  • Large eggs – If you have dietary restrictions, you can use egg substitutes or tofu as an alternative.
  • Heavy cream – For a lighter option, use whole milk or a dairy-free alternative like almond milk. Just use a little less if your milk is thin.
  • Salt and pepper – Feel free to experiment with your favorite herbs and spices to enhance the flavors.
  • Burrito-size flour tortillas – Opt for whole wheat or gluten-free tortillas if desired, but classic flour tortillas freeze well and thaw quite soft and fresh.
  • Refried beans – A can from the Tex-Mex aisle will work great. Black beans or pinto beans can be used as a tasty replacement.
  • Shredded Mexican blend cheese – Cheddar, Monterey Jack, or any spicy cheese of your choice can be used here.

How to Make

STE ONE: Preheat the oven and bake the tater tots. Preheat the oven to 400° F. Cook tater tots according to package instructions.

STEP TWO: Cook the sausage and eggs. Heat the avocado oil in a large skillet over medium-high heat. Add the sausage and cook until browned. Add the eggs to the skillet and cook, whisking until they just begin to set. Gently whisk in half and half, and season with salt and pepper to taste. Continue cooking until thickened, about 3-5 minutes.

STEP THREE: Prep the burritos. Spread the refried beans down the centers of the tortillas. Top with tater tots, sausage and egg mixture, and cheese. Fold on opposite sides of each tortilla, then roll up burrito-style.

STEP FOUR: Wrap the burritos. Wrap each burrito in parchment paper and tie it with cooking twine. You can also place each one in a small Ziploc bag, just be careful they don’t unwrap! Place the burritos into a large, freezer-safe Ziploc bag, label them, and freeze.

STEP FIVE: Reheat. You can reheat it from frozen by placing the opened burrito on the parchment paper in the microwave. Cook for 2 minutes, flip, the cook an additional 2 minutes.

Tips and Recipe Notes

  • Allow the cooked ingredients to cool slightly before assembling the burritos. This helps to prevent the tortilla from getting soggy.
  • Don’t overstuff the burritos; a moderate amount of filling will make rolling them up easier.
  • When reheating, flip the burrito halfway through. This helps the burrito reheat more evenly.

Breakfast Burrito Recipe Ideas

Here are some ideas if you want to create some new flavor options for your family:

Veggie Lover’s Delight: Sauteed bell peppers, onions, and spinach for a flavorful and colorful veggie-packed filling.

Cheesy Bacon Burritos: Combine crispy bacon pieces with your favorite shredded cheese and egg mixture. Yum!

Southwest Sensation: Black beans, diced green chilies, and a sprinkle of cumin and chili powder add a zesty Southwestern flair.

Breakfast Fiesta: Add salsa, diced jalapeños, and a mix of cheddar and pepper jack cheese to the egg mixture for a spicy and festive filling.

FAQs

Can I use scrambled eggs instead of whisking them in the skillet?

Scrambled eggs work perfectly fine in this recipe if you prefer them over whisked eggs.

Can I bake the burritos instead of microwaving them for reheating?

Yes, you can reheat the burritos in the oven at 350°F for about 20 minutes or until heated through. Cover them with foil to stop the tortilla from getting too brown. You can spread the top with a little bit of butter and brown them under the broiler for about 30 seconds before serving if you would like.

How do you freeze breakfast burritos so they don t get soggy?

Allow the filling to cool before adding it to the burritos. Then make sure you individually wrap them in parchment, wax paper, or foil. You can also place them in individual plastic storage bags before freezing.

Can this Recipe Be Made Gluten-Free? Dairy-Free?

Yes, this recipe can be made gluten-free by using gluten-free tortillas and ensuring that all other ingredients are free from gluten. If you want a dairy-free option, use dairy-free milk instead of cream as well as vegan cheese.

  1. Yum! So easy but they sound delicious! I usually don’t put refried beans in my breafast burritos, but that’s a great way to mix it up!
