You’ll LOVE Scrambled Eggs on Toast

Adding scrambled eggs to a slice of avocado toast makes for a satisfying, delicious and balanced meal. The combination of flavors and textures will elevate your morning. Adding eggs not only enhances the flavor, but also boost the protein content, making it more energizing and keeping you full for longer. It is the ideal combo for the whole family that can be enjoyed at home or on-the-go.

Ingredients for Egg Avocado Toast

  • Texas toast – swap with a slice of Artisan bread, sourdough or bagels. Sturdy, thick slices of bread are necessary for the base to hold both the avocado and eggs.
  • Eggs – serving as protein for this recipe, the soft, fluffy texture of scrambling the eggs pairs perfectly with the creaminess of the avocado.
  • Butter
  • Shredded white cheddar cheese – replace with a sharp cheddar cheese or feta cheese if desired.
  • Avocados – the star of the show! Mash right before adding to the toast to prevent browning.
  • Lemon, juiced – freshly squeezed lemon on the toast brings brightness to the avocado mash.
  • Red pepper flakes – adjust amount depending on level of spice that is desired.
  • Salt
  • Green onions, optional

How To Make Avocado Toast with Egg

STEP ONE: Prep the bread. Toast the bread in the oven according to package instructions. Arranging the bread slices in a single layer on a baking sheet will help to ensure even toasting. Once done, remove from the oven and let cool slightly before adding the toppings.

STEP TWO: Whisk the eggs then cook. Beat the eggs in a bowl with salt and pepper. Adjust seasoning based on taste preferences. Then, in a non-stick skillet, melt 2 tbsp of butter over low heat.

Pour the beaten eggs into the skillet and slowly cook on low. Stir frequently, scraping from the bottom of the skillet to prevent the eggs from sticking and to achieve a creamy, soft texture. As they are about halfway done cooking, sprinkle the cheese into the eggs. Continue to stir until the cheese is fully melted and the eggs have reached desired doneness. Immediately remove from heat to avoid overcooking.

STEP THREE: Make the guacamole. Combine the avocado, lemon juice, red pepper flakes, and salt in a mixing bowl. If serving to small kids or adults disliking spice, consider omitting the red pepper flakes. Mash the avocado to your preferred texture – smooth or slightly chunky.

Spoon a generous amount of avocado mash onto each slice of bread. Use the back of a spoon or a knife to spread evenly on top of each slice of garlic toast. Finally, add the cheesy eggs on top of the avocado layer.

STEP FOUR: Serve. Serve hot garnished with green onions if desired.

Recipe Notes & Helpful Tips

  • Use an immersion blender to whip the eggs for even fluffier scrambled eggs.
  • To pick a ripe avocado, squeeze gently – they should give slightly when pressed but shouldn’t be mushy.
  • Speed up the process by placing an unripe avocado in a bag with an apple.
  • Always use a thick slice of bread for avocado toast to have a sturdy base that supports the toppings without getting soggy.
  • Prep right before eating as avocados brown quickly. If seeking a recipe you can make in advance, consider Make-Ahead French Toast Casserole.

The addition of lemon juice to the avocado mash will help prevent browning as the acidity slows oxidation. If you need to store leftover avocado, press plastic wrap directly onto the surface on the avocado and refrigerate.

When made as written, this avocado toast with scrambled egg is NOT gluten-free. You can make gluten-free by swapping the Texas Toast with a gluten-free toast or bagel to easily accommodate dietary needs. As always, verify all ingredients to check for hidden sources of gluten.

Dairy-Free Avocado Toast

Turn this recipe dairy-free by omitting the shredded white cheddar cheese and replacing the butter with olive oil. Depending on the brand of Texas toast, you may need to swap with an alternative bread option to keep the entire dish dairy-free.

Storing Avocado Toast with Scrambled Egg

Prepare this avocado toast recipe with egg fresh to enjoy the best flavor and texture. The avocados will brown, and the bread can become soggy with time. If you have leftover ingredients, I recommend storing separately in the fridge then assembling the next day.
