Ingredients

  • 6 slices texas toast frozen
  • 8 large eggs
  • 2 tablespoons butter
  • 1/2 cup shredded white cheddar cheese
  • 2 avocados mashed
  • 1/2 lemon juiced
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • green onions optional

Instructions

  • Prep the bread. Toast the bread in the oven according to package instructions.

  • Whisk the eggs then cook. Beat the eggs in a bowl with salt and pepper. Melt 2 tbsp of butter in a skillet. Pour the eggs into the skillet and slowly cook on low. Stirring frequently. As they are about halfway done cooking sprinkle the cheese into the eggs.
    8 large eggs, 2 tablespoons butter, 1/2 cup shredded white cheddar cheese
  • Make the guacamole. Combine the avocado, lemon juice, red pepper flakes, and salt in a mixing bowl. Spread on top of each slice of garlic toast. Add the cheesy eggs on top.

  • Serve. Serve hot garnished with green onions if desired.
