Broccoli and Cheese Stuffed Chicken Breasts

Ingredients

  • 1.5 pounds chicken breasts
  • 1 1/2 cups broccoli florets steamed
  • 4 ounces cream cheese room temperature
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 fresh lemon juice optional

Instructions

  • Mix the stuffing ingredients. To the mixing bowl, add the steamed broccoli, cream cheese, mozzarella cheese, and garlic powder. Blend well using the fork to mix in the cream cheese.
  • Stuff the chicken breasts. Place chicken breasts onto a cutting board. If the chicken breasts are thick, first cut them in half, lengthwise. Then cut a pocket into the chicken by slicing lengthwise, but not all the way through. Using a spoon, divide the broccoli mixture equally and stuff into the pockets.
  • Cook the chicken. Warm the skillet over medium heat. Add the olive oil and let it get hot. Add the stuffed chicken breasts, season with salt and pepper, then let cook for 5-6 minutes. Flip then cook an additional 5-6 minutes or until the internal temperature reaches 165°F. Squeeze a drizzle of fresh lemon juice onto the chicken if desired. Serve right away.

  • Boursin cheese for the cream cheese
  • cooked spinach, bell peppers, mushrooms or asparagus for broccoli
