Ingredients

  • 1 pound ground pork sausage
  • 1 tablespoon olive oil
  • 1 large yellow onion diced
  • 1 red pepper diced
  • 1/2 cup sugar snap peas
  • 8 ounces sliced mushrooms
  • 3 cloves garlic minced
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce tamari for gluten free
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh ginger grated
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 3 cups cooked rice
  • sliced green onions for garnish optional

Instructions

  • Brown the pork sausage. In a large skillet over medium heat, cook the pork sausage until browned. Remove the pork from the skillet to a plate and set aside.
  • Saute the vegetables. Add the olive oil to the same skillet and add the onions, peppers, snap peas, and mushrooms. Saute for 4-5 minutes or until tender. Add the minced garlic and continue to cook for 1 minute. Add the ground pork back to the skillet.
  • Make the sauce. In a small bowl whisk together the brown sugar, soy sauce, vinegar, ginger, red pepper flakes, and pepper. Pour over the ground pork mixture.
  • Make the slurry. In another small mixing bowl combine the cornstarch with the water. Stir until smooth. Add the slurry to the skillet and stir until thickened, about 2 minutes.
  • Serve. Garnish with green onions and serve over warm rice.
