- 1 pound ground pork sausage
- 1 tablespoon olive oil
- 1 large yellow onion diced
- 1 red pepper diced
- 1/2 cup sugar snap peas
- 8 ounces sliced mushrooms
- 3 cloves garlic minced
- 1/2 cup brown sugar
- 1/2 cup soy sauce tamari for gluten free
- 2 tablespoons rice vinegar
- 1 teaspoon fresh ginger grated
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon freshly cracked black pepper
- 1 tablespoon cornstarch
- 1/4 cup water
- 3 cups cooked rice
- sliced green onions for garnish optional
Brown the pork sausage. In a large skillet over medium heat, cook the pork sausage until browned. Remove the pork from the skillet to a plate and set aside.
Saute the vegetables. Add the olive oil to the same skillet and add the onions, peppers, snap peas, and mushrooms. Saute for 4-5 minutes or until tender. Add the minced garlic and continue to cook for 1 minute. Add the ground pork back to the skillet.
Make the sauce. In a small bowl whisk together the brown sugar, soy sauce, vinegar, ginger, red pepper flakes, and pepper. Pour over the ground pork mixture.
Make the slurry. In another small mixing bowl combine the cornstarch with the water. Stir until smooth. Add the slurry to the skillet and stir until thickened, about 2 minutes.
Serve. Garnish with green onions and serve over warm rice.
