Instant Pot Frittata Recipe

Instant Pot Frittata is a delicious and easy breakfast or brunch option that's packed with protein and flavor. This frittata recipe made with goat cheese and bacon is perfect for anyone who wants to start their day off right with a filling and tasty meal.

Ingredients

  • 5 slices bacon cooked and diced
  • 10 large eggs
  • ½ cup half and half
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 red bell pepper diced
  • ¾ cup asparagus diced
  • 4 ounces goat cheese crumbled
  • dill for serving
  • 1 avocado sliced for serving

Instructions

  • Prep the instant pot and pan. Add 2 cups of water to your Instant Pot. Spray the instant pot insert pan with nonstick cooking spray.
  • Prep the frittata. In a large mixing bowl whisk together the eggs, half & half, salt, and pepper. Stir in the bacon, red bell pepper and asparagus. Add the crumbled goat cheese and gently stir. 
  • Place the frittata into the instant pot. Pour the egg mixture into your prepared pan and cover it with foil. Place the container carefully onto the instant pot trivet. Using the handles on the trivet, lower it into the Instant Pot. Secure the lid and set the valve to sealing.
  • Cook. Select high pressure and set the cooking time to 25 minutes. When the time is up let the pressure naturally release for 10 minutes. After 10 minutes turn the valve to venting to release any remaining steam. Using oven mitts, remove the trivet from the instant pot.
  • Serve. Let the frittata cool a little before slicing. Serve with sliced avocado and dill.

Notes

Remember that it will take 15 minutes for the Instant Pot to come up to pressure before the 15 minutes of cooking begins. Plan accordingly with the time.

Variations: try using sun dried tomatoes instead of red pepper. It tastes phenomenal with goat cheese. If you try adding sun dried tomatoes, drain the oil out of the jar first.
