Whole30 Approved Vegan Caprese

Have you done the Whole30 diet before? I must admit I am a fan and eat Whole30 recipes often. One thing that was hard for me to give up was cheese. Which is why I came up with this delicious caprese using avocado instead of mozzarella.

I find it to be delicious. My husband on the other hand prefers the original version with mozzarella. 

My recipe also calls for Coconut Aminos. You might be wondering what in the world is that? Coconut aminos are made from “sap” (actually coconut-blossom nectar) from coconut palms. The sap is fermented and then blended with sea salt. Coconut aminos are used as a substitute for soy sauce in recipes because it has 73 percent less sodium than soy sauce and is soy and gluten-free.

Ingredients:

1 Roma tomato, sliced

Fresh basil

Avocado, sliced

Directions:

Stack tomato, avocado, basil.

Top with balsamic vinegar or coconut aminos.
